Can onions be omitted in canning recipes? #878613

Hello! I do not like onions, but a lot of canning recipes include them. I would like to know if I can omit onions from canning recipes such as cucumber relish, pickles, and salsa. I have read articles from various extension offices that state the amount of onions can be reduced or substituted in canning recipes, but I have not found any articles that state onions can be eliminated entirely or what they can be substituted with. I would appreciate any information you can provide about the role of onions in canning and whether they are required, especially in hot water bath recipes. Thanks!

I am sure you have finished your canning by now. However, I consulted with our Food Safety Agent, she confirmed that you may omit the onions.
