Finished water bath for batch of curry dill pickles and realized we omitted the salt (last addition to each jar). Can we open each jar, add salt, and re-lid & process or will the pickles be too soft when done?

You didn't say the source of your recipe. If it has a 1:1 ratio of vinegar to water the salt is not a safety issue but added for flavor and crispness. I think by opening the jars, adding the salt and then reprocessing you would probably end up with really soft pickles.
You might add the salt when opening the jar and let it set in the refrigerator for a few days before eating them so the salt can be absorbed into the pickle.
