Hi Glenn. We recommend you follow the canning and pickling salt-based recipe for sauerkraut to bring out the flavors developed from the naturally occurring bacteria that produce lactic acids. See page 10 in Pickling Vegetables for our Sauerkraut recipe.

If you would like to flavor your sauerkraut with wine, we recommend you mix it in to taste right before serving.
