Hi Glenn. We recommend you follow the canning and pickling salt-based recipe for sauerkraut to bring out the flavors developed from the naturally occurring bacteria that produce lactic acids. See page 10 in Pickling Vegetables for our Sauerkraut recipe.
Added acids in wine may disrupt this process. We do not have a recipe that can reliably produce a good quality product.

If you would like to flavor your sauerkraut with wine, we recommend you mix it in to taste right before serving.
