I found a recipe for spiced golden plum jam. I found it on page 45 of the Ball Complete Book of Home Preserving.
The recipe calls for golden plums. I am not sure if I will be able to find them. I am wondering if I can substitute regular red plums. I understand that the color will not be the same, I am just concerned about the acid levels being the same.

Hello,
Yes, you can substitute red plums for yellow plums. Red plums are more acidic than yellow. So that would be fine.
