Thanks for contacting Ask Extension. Because you mention farmers markets in your question as the sales venue, I assume that you want to produce and sell a product under the Oregon Farm Direct Marketing Law. If your product qualifies for sale under that law, you need to select a recipe from an approved source, or you need to get your recipe approved by a recognized process authority.
