Some of my perennials have produced volunteers. Which strategy should I use: 1) let them overwinter where they are and transplant in the spring; or 2) dig up in the early fall and transplant in their new home; or 3) dig up in the early fall and put into large pots, to overwinter in the pots outdoors - except brought into the garage if the temperature will get below 20-25 degrees?

Hi Carol,
Options #1 or #2 would be easiest and the least amount of work. If you transplant this fall, be sure to do it before mid-September and water regularly to get them established before fall. Also mulch them well for the winter.
If you transplant in spring, just treat them like newly planted perennials and water to get them established.
