Is it safe to steam juice cherries without pitting them?

Hi Marilyn. Yes it is safe to steam juice sweet and tart cherries. To maximize the usable juice you might want to cut them in half and place them cut side down in the perforated basket so the juice can easily drip down. The skin might act as a "cup" and keep the clear juice from dripping out of the cherry. Once the steaming is complete, don't "squeeze the pulp" that is left as it can make your juice, syrup or jelly cloudy. If you run the left over pulp through the food mill to remove the pits, you can make a nice fruit leather in your dehydrator. Here are some resources that may be helpful.
