I would like to can salsa that includes peppers an garlic but no onions. Is there an approved recipe for this?
I found a canning salsa recipe in PNW395 a publication from the pacific northwest that does not include onions but there is no garlic in the recipe. Can I add garlic to the recipe?

Hi there. I'm glad you reached out because there is a lot of misinformation on canning salsa. I have attached a fact sheet that does explain many incorrect thoughts and practices on how to can salsa. It would be acceptable to leave out the onions from a recipe and continue to process according to the recipe.
This fact sheet does provide you with a couple of recipes, one of which does have garlic in the recipe. This link is also for some recipes from Ball, you can select one that appeals to you - but many have garlic in the recipe and again - you can just leave out the onions wihtout issues.
