Hi there,
I have been growing seedless blackberries and am trilled to have A LOT this year. I want to can the juice that I get when I run it thru my Juicer and I don't want to add much sugar. How little sugar can I add and still be safe? (I read your info on Low Sugar Jams. It says the sugar helps to safely preserve, and can only be lowered IF using a "low sugar pectin". But my syrup will have NO pectin.....so I don't know.

I have attached a copy of a fact sheet titled “Preserving Foods: Fruit Juices & Apple Cider” which provides instructions for safely canning fruit juices, including blackberry juice. You can add sugar to taste without adversely affecting food safety. What’s most important is that you follow the canning instructions contained in the fact sheet to ensure that the canned juice is a shelf-stable, safe product.
