Smoked and Canned Halibut #876141

I smoke and can (in jars) the previous year’s salmon but can I also smoke and can halibut? If so, is it basically the same process? What kind of brine should I use? Thank you.

Gail, Yes, you can smoke and pressure can halibut. It is basically the same process. It is suggested to use less salt since halibut will absorb salt faster than oily fish like salmon. Salt serves as an extra protection against bacterial growth so be sure to process the fish in a pressure canner promptly.
