Pruning fruit trees (cherry, pear, and apple) #875642

Hi! I have sour cherry, pear, and apple trees in my yard. How early can I prune those? I will be getting my roof and siding replaced and would like to prune the trees before the work but the contractor wants to start asap. Thanks!
