Swapping Beans #874984

Asked June 27, 2024, 2:42 PM EDT

I'm following a safe, tested recipe for vegetable soup, which calls for lima beans. My family doesn't care for those, so I want to evenly swap them for kidney or black beans. If I'm understanding bean processing, this would be a safe swap. I would just like to verify. Thank you.

Hi Sandra!

Can you please provide the original recipe and confirm whether dried or cooked beans are being added?

Thank you.

To confirm, in this recipe are the 4 cups of lima beans already cooked beans or dry? Need this information because how much water the beans absorb is an important factor (water/solids ratio).

It states "green", so I assume they are fresh. I would swap with fresh.

I received feedback from a process authority and she stated that the lima beans should NOT be swapped with other beans because of concerns with differences in how the starches might leach out of the different types of beans - potentially affecting the safety of the product.
