Do irises change their colors.

Not to our knowledge, no, unless you mean a mild change in color (like getting paler or darker) as individual flowers fade, but blooms appearing one color one year and then another color the next year is not typical. Do you have more information or photos about what you're seeing, in case something else is going on with the plants?
