It is never safe to can wild mushrooms. Your mushrooms in oil should be not be eaten. Botulism is very painful, requires lengthy, specialized medical treatment and is very expensive. Cases in Oregon in 2015 cost $1.4 to $1.8 million. See the directions for Disposal or Detoxification (you can salvage your jars this way) in Canning Vegetables, page 7.
To make Herbs and Vegetables in Oil read the information and directions and follow the steps in the publication. Because these products must be refrigerated and used within 4 days or frozen you might want to make small batches. You can preserve your wild mushrooms by dehydrating them in an electric dehydrator. Most mushrooms dry very well this way. Then, rehydrate them the day before you want to make your Mushrooms in Oil so they can be thoroughly dried by the next day. Rehydrating doesn't take long (usually less than two hours), so store your rehydrated mushrooms in the refrigerator between some paper towels until ready to make Mushrooms in Oil.
