Some of my coneflower plants have dried-up looking leaves, but it's not affecting the whole plant. And I also have lots of coneflower plants that don't have this issue. Is there something I should do?

Coneflowers respond to Al lot of environmental situations. I think what could be happening with yours is maybe too much moisture.
You can trim off the affected leaves and dispose of them in the garbage. This will prevent the possibility of a disease from spreading.
I think they should be ok. If the plant continues getting the brown leaves however, you can spray it with Neem oil following instructions on the container.
