I am traveling to Africa and have been asked how rural poverty areas can preserve food. We have talked about drying fruit is the sun. There list now includes sweet potatoes.

We can recommend conventional information on dehyrdating, but this information is based on research done in the US - so it might be different for the climate of Africa. For example, sun-drying is not feasible in the Northern US climate, but in some dry, arid areas in the US it can be done - and with select foods.

The info I received was not helpful.
I am going to Africa where there is no electricity. They have lots of sun. We are looking at preserving Bananas, Sweet Potatoes, Mushrooms, Cassava, Maize, beans, Mango, Cowpeas.
Any help you can give us would be appreciated.

It is not recommended to dry meat or vegetables outdoors, but most fruits are usually acceptable (bananas and mangos of those you mentioned). You do want to take preventative steps to prevent contamination from insects and also bring indoors during cool night temps to prevent rehydration. This is explained in the link.
If you do not have electricity, please do not risk it and sun-dry meat/vegetables.
