Jam has a funky aftertaste #872128

Asked June 07, 2024, 5:28 PM EDT

I recently canned some strawberry jam using Sure-jell and strawberries from the grocery store (I don't remember what brand or where they were grown). I have done this every year for many years. The batch I made has an aftertaste that is VERY off-putting. I can't decide if it's a musty taste or like the pink pucks my grandma used to keep in her toilet. I had to spit it out! The interesting thing is that my sister also had the same reaction, but my husband, kids, parents, and siblings found nothing offensive about it! My brother did note that he felt it had a little bit of a sparkly sensation at the end. (No one became ill from eating it.) The jam tasted this way un-canned and canned. I considered that perhaps it was the Sure-jell because I had purchased it last year, but the expiration is still over a year away. The other thought is that its the variety of strawberry or something used to preserve it. Has anyone come across this issue before?

April,

I have not heard of this happening recently with others.  Typically, if the Sure-jell is bad/expired the jam doesn't set up as well.  The off taste could be from the quality of the fruit itself.  It could also be from the jars if they were not sterilized for 10 minutes and there was soap residue left in the jars prior to filling.  Although no one has become sick, foodborne illness can take days to weeks to show symptoms.  If there is an off taste, I would recommend not eating it and throwing it away unfortunately.  I am not sure what recipe you used, but we always recommend following a research-based recipe.  I have attached a list of our recommended resources for research-based recipes.  Please let me know if you have any other questions.

Thank you so much!  I have not let anyone eat anymore (I made it in early May), and I will now definitely throw it out.  Thank you!
