We have a large crabapple tree that has fairly severe apple scab. I would like to cut out dead branches in order to increase airflow to slow the spread of the fungus and hopefully save some of the leaves. Is it okay to cut the dead branches in June?

Yes, It is only pruning oaks that is not advised in the summer. This web page may provide some additional information.
