Shelly—Are you producing sunflowers commercially? If so I need to refer you to a county agent as commercial procedures will be different than those for homeowners. In addition a commercial grower needs the most economically beneficial options. Where are you located?
One possible cause of the head drooping that you're seeing is overwatering. If you're in the north central Texas area, that's a real possibility this spring.
I see two unusual areas of girdled stem. Do you see that feature on other plants that are similarly drooping?
