I am wanting to find some Hydrangeas types that would be in the shade most of the day, and only get late afternoon sun.

I have linked a fact sheet on hydrangeas at the bottom. you can plant bigleaf or native oakleaf  hydrangeas in the light exposure you mentioned if the full sun exposure is after 3 or 4 pm. Peegee hydrangeas like full sun for best flowering, but may do okay for you if the full sun is much earlier in the afternoon.
