Hi I've been informed by the Inspector of ag that I need my frosting and filling tested for stability. I live in Eugene and am not sure how to go about it. He said something about a water test ? Can you help me please ?

Hello Tegan and thank you. I am trying to start a business selling cupcakes and am working with Jeff Green whom is an Inspector of Agriculture and who is doing my licensing. I would be selling in different locations in Eugene and surrounding areas at events like Saturday mkt ect and I would be producing my product at a commercial kitchen such as Erins Table. Mr. Green has asked me to get my fillings and frosting tested by you (water test ?) for shelf stability however I do not know how to go about doing that. Any advice would be appreciated and again thank you so much for your time.
Thanks for providing the addition information. It is still unclear as to what tests ODA is requesting and why they are requiring them based on the information provided. A "water" test could possibly refer to active water content, but what is meant by "stability?" Please clarify. ODA maintains a list of certified testing labs. Mr Green should be able to provide you with that information.

I have no clue what he means but I have decided that instead of going into business clueless I'm going to step back and enroll in some classes next semester so I won't have to waste your time nor mine and get a clue !! Thank you so much and I'll be back soon..
