Hi. We had a big tree in our backyard flagged for Emerald Ash Borer, so we had to have it cut down. Unfortunately, the tree keeps trying to grow back from its side, and we continue to cut those new shoots off. What are things we can do to stop the tree from trying to regrow? Thanks!

You are doing the right thing. Keep pruning the new growth and it will eventually weaken the tree and it will die.
The other option is to have the stump ground out by a tree professional. Call around to find someone near you and reasonable priced.
