What’s eating my serviceberry? It was healthy a week ago and now has all of these little holes everywhere!

It’s not possible to identify what is eating your serviceberry without actually seeing an insect. It is apparently a chewing insect. Although it is unsightly now, it doesn’t look like the shrub is suffering. Keep it well watered to keep it healthy. Most insect problems are cyclical so it will likely pass soon.
