If you are referring to the sale in Sedalia at the Sedalia Museum, I believe that many of the plants are both organic and in organic soil; they are produced by museum volunteers who will be present on site so you can double-check with individual growers.

CSU Extension is present to provide tours of the demonstration gardens and answer gardening questions; we aren't directly involved with sale operations, though!
