The stems are chewed through at the base. All the leaves are one and all that remains are the leaf stems. Whatever it might be has begun eating the black bean plants in the same manner and consuming the pods,

A photo might help, but my first guess would be cutworms. Cutworms are active at night and chew off the plant stem at the soil line, then feed on the downed plant debris. Read here:
