Hello
The grafting class that is offered by MSU is done late winter early spring. For next year, start searching for ‘Michigan MSU Fruit grafting’ in January or February. Classes this year were held in March.

Sometimes your local Conservation District will have a class in early spring. Contact your local orchard and see if someone will instruct you.
Take a look at this MSU video, which discusses pruning the year before so as to get sprouts for grafting next year:

William Shane, MSU Fruit Horticulture Educator, has this tutorial:

Mr Shane’s weebly site has many other topics about fruit growing.
I am forwarding your question to one of our Fruit Educators who may have more resources for you.
I am not aware of any classes available currently on grafting peach. Grafting in general is pretty straight forward, as long as you follow all of the steps carefully and create a few more plants than you think you need, because not all of them may take. I would suggest you try a couple of different approaches and see what works best for you. It can be very gratifying, so enjoy the process!
