Just want to double check - the blossoms on my cucumber seedling should be removed, correct? And the same with any other veggie, including tomatoes and squash?

Hi, 

Yes, they are too small/early to start producing flowers and may be doing so as a sign of stress. 

Are they receiving adequate light, water and fertilizer? Do they need to be potted up to a larger pot?

Since you need to water seedlings often, it is best to give them a regular dose of liquid fertilizer per the label directions to make sure they are receiving enough nutrients. 

If you have a garden space and are waiting to transplant them, you could transplant them now where they would likely do better, instead of potting them up. You should harden them off first for about a week then just watch the temperatures for any cold nights if its going to get below 50 at night you can cover with a row cover or old sheet.
