I am assuming for your question you are asking about between Christmas tree rows. In the row we would recommend keeping a weed free strip. Between the rows of trees many different options exist. Alfalfa would likely be poor, because the pH requirements for trees would be lower than that. Rye grass would work. Another option is a low growing fescue, which would require less mowing/maintenace than other options. Clover is also commonly planted, but does require attention to not grow into the Christmas tree rows and become a weed. There is not one right answer, but consider how you can/will manage it.
