potato taste issue #866840

Asked May 02, 2024, 11:02 PM EDT

Hi, What could make my garden potatoes taste NOT very good? I had topsoil delivered, and I did find a few little plastic things in it. Could my soil be contaminated, or do you think it's just not the right ph or natural chemical mix? Thanks.

Expert Response

Hi Angela, thanks for the question.

There are a few possibilities to why your potato flavor is not good.  Light exposure to the tubers both when growing and in storage can cause bitterness due to the production of solanine when exposed.  These potatoes that appear green should not be eaten. Keep tubers covered with soil and harvested potatoes so they are not exposed to light. Improper watering, soil pH, and environmental issues can also influence flavor. Try to water properly and consistently.  Make sure you have good drainage. Potatoes like a low pH (5.5-6.0) and the proper nutrients.  If you haven't done a soil test (Home | MSU Soil Test) recently, it would be helpful. Potato variety will affect the flavor also. Pick varieties that fit the intended usage and cooking method. Be sure to buy certified seed potatoes Do not use grocery store potatoes.
