Best sources for soft cheese and yogurt making #865824

I'd like to try my hand at making ricotta cheese and home-made yogurt. I'd also like to make dry milk to take on backpacking trips. Can you recommend a source with instructions for doing these things safely? Any advice would be appreciated!
