Trimming arborvitae branches to trunk

I have what I believe is a large arborvitae growing against my garage. It’s maybe about 12-13 feet tall. It’s on the west corner of my vegetable garden and it blocks several hours of sun, so I’d like to cut it somehow. Removing it all together isn’t an option, but I was considering removing all the branches from the bottom 6 or 7 feet, leaving it in a kindof deciduous shape. My hope was that this would allow a couple more hours of sunlight to the garden. But I’m afraid that cutting this much off will damage or kill the shrub. Can you tell me if this is possible? How to prune French Scotch Pine seedlings to encourage low limb growth and minimum height. We want to use some as live Christmas trees with minimal exposed trunk. HAve several hundred seedlings which are about 24" tall plus a 12" root mass. Will it grow fatter if we lob off the top? I have read where topping risks weaker lateral branches and insect invasion. I'm planning to can a tomato sauce using Amish paste tomatoes, beginning this afternoon. I've used this recipe several years, it's from a reputable source. My question: I won't have time to finish canning today. I can easily get the tomatoes peeled and chopped a bit. If I cook the sauce with dried spices day, can I reheat thoroughly and then can in sanitizes jars, in two days? I'll be using citric acid. Should I use the boiling water bath, or pressure can? I will be canning a tomato sauce using Amish paste tomatoes, beginning today, using a recipe I've used several times, from a reputable source. My question: I won't have time to finish canning today. I will get through the skinning and core removal, approximately 25 pounds tomatoes. ID like to begin cooking the sauce today. Is it safe to begin cooking the sauce, with dried herbs, then reheat thoroughly in 2 days, and can then? I will be using citric acid, sterilized equipment, and probably will pressure can. I'm having an issue with disease on the majority of my pepper plants. The leaves have brown patches on them from the ends of the leaves to spots on the leaves. Is there anything that can be sprayed that will be effective this late into the disease cycle. Some look better than others but it have moved into leave drop on some. I have pulled and discarded the worse plants as not to spread but trying to figure out what can be used as a fungicial spray that is sold in the garden center although I would prefer not to spray anything at all. I have straw around the plants so no to get soil slashing up on the leaves. I did not take a picture of the plants but I can tonight if that would help
