I have roasted tomatoes in the oven with a little olive oil and salt and frozen them with good results. I include many different kinds of tomatoes when I do this. The roasted tomatoes are not dry when they are finished, but instead they have a nice concentrated flavor. I am interested in canning my roasted tomatoes, but I have not seen any recipes for this. Besides the safety factor, I'm not sure that the texture of the tomatoes would hold up in processing. Any ideas?
